- 2 cups of sliced mushrooms
- 1/2 teaspoon of dried oregano
- 1/2 teaspoon of dried basil
- 1/2 teaspoon of salt
- 1/4 teaspoon of freshly ground black pepper
- 1/2 cup of chopped fresh parsley
- 1 (25-ounce) jar of marinara sauce
- 1 (9-ounce) package of no-boil lasagna noodles
- 3 cups of shredded mozzarella cheese
- 1/2 cup of grated Parmesan cheese
- Preheat the oven to 350 degrees F (175 degrees C).
- Heat the olive oil in a large skillet over medium heat. Add the garlic, mushrooms, oregano, basil, salt, and pepper; cook and stir until the mushrooms are tender, about 5 minutes.
- Stir in the parsley and marinara sauce; simmer until heated through, about 10 minutes.
- Spread a thin layer of the mushroom sauce in the bottom of a 9×13-inch baking dish.
- Top with a single layer of the lasagna noodles (about 3-4 noodles). Spread a third of the remaining mushroom sauce over the noodles, then top with 1 cup of the mozzarella cheese.
- Repeat the layers twice more, ending with a layer of noodles, mushroom sauce and mozzarella cheese.
- Sprinkle the Parmesan cheese over the top. Cover the baking dish with aluminum foil.
- Bake in the preheated oven until the lasagna is hot and bubbling, about 45 minutes. Remove the foil and continue baking until the cheese is melted and golden brown, about 10-15 minutes.
- Let the lasagna cool for 10 minutes before serving.
