Classic Cajun Fried Chicken Po’Boys with Spicy Remoulade Sauce

Ingredients
For the Fried Chicken:
- 3 cups all-purpose flour
- 1/4 cup paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cayenne pepper
- 1 teaspoon black pepper
- 2 eggs, lightly beaten
- 4 boneless, skinless chicken breasts, cut into strips
- Vegetable oil for frying
For the Remoulade Sauce:
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon ketchup
- 2 teaspoons fresh lemon juice
- 2 teaspoons Worcestershire sauce
- 1 teaspoon hot sauce
- 1/4 teaspoon paprika
Instructions
To make the Fried Chicken:
- In a medium bowl, whisk together the flour, paprika, garlic powder, onion powder, cayenne pepper and black pepper.
- In another bowl, whisk together the eggs.
- Dip each chicken strip in the egg and then coat with the flour mixture.
- Heat the oil in a heavy-bottomed skillet over medium-high heat.
- Add the chicken strips to the skillet and fry for 4 to 5 minutes, turning once, until golden brown.
- Drain on paper towels.
To make the Remoulade Sauce:
- In a medium bowl, whisk together the mayonnaise, mustard, ketchup, lemon juice, Worcestershire sauce, hot sauce and paprika.
Assembly
To assemble the Po’Boys:
- Spread the remoulade sauce on the split rolls.
- Top with chicken strips, lettuce and tomato.
- Serve with extra remoulade sauce on the side.
