- 1 teaspoon freshly chopped parsley
Instructions
For the pastry:
- In a large bowl, combine the flour and salt. Cut the butter into the flour mixture using a pastry cutter or two knives until the mixture is crumbly.
- Add the cold water and mix gently until the dough comes together. Form the dough into a disc, wrap in plastic wrap and chill in the refrigerator for 30 minutes.
- On a lightly floured surface, roll the dough out to about 1/4-inch-thick and use to line a 9-inch pie dish. Crimp the edges and chill in the refrigerator for 15 minutes.
For the filling:
- In a large skillet, melt the butter over medium heat. Add the onion, carrots and celery and cook, stirring occasionally, until tender, about 5 minutes.
- Add the black pepper and garlic and cook, stirring, for 1 minute. Add the flour and stir to combine.
- Add the chicken, peas, corn and chicken broth and stir to combine. Bring to a boil, reduce the heat to low and simmer until the mixture is thickened, about 10 minutes.
- Stir in the cream and parsley and simmer for 2 minutes. Remove from the heat and let cool slightly.
- Pour the mixture into the prepared pie dish. Place the bottom crust over the filling and crimp the edges to seal.
- Cut several slits in the top of the crust to vent steam. Bake in a preheated 375°F oven for 30-35 minutes, or until the crust is golden brown.
