Recipe 1: Pupusas
A Salvadoran staple, pupusas are tasty corn tortillas filled with cheese and/or meat, and topped with a delicious homemade tomato sauce. Pupusas are a popular snack, as well as a great meal starter. Here’s how to make them:
Ingredients:
– 2 cups Maseca, an instant corn flour
– 1 teaspoon salt
– 2 cups of warm water
– 2 cups of your desired filling, such as refried beans, shredded cheese, and/or cooked meats
– 1/2 cup salsa
– 1/2 cup queso fresco, crumbled (optional)
Instructions:
1. In a large bowl, mix together the Maseca and salt. Add the warm water, and stir with a spoon until the mixture forms a ball of dough. Knead the dough for a few minutes until it’s smooth.
2. Separate the dough into individual balls, about the size of a tangerine.
3. Flatten the balls, then add a spoonful of the filling in the middle of each one.
4. Fold the dough over the filling, then roll, flatten, and reshape the ball until the filling is completely covered and the pupusa is a flat disc shape.
5. Heat a large skillet over medium heat and add enough oil to coat the bottom.
6. Add the pupusas to the pan and cook for 3-4 minutes per side, until golden brown and crispy.
7. Serve the pupusas hot, with the optional queso fresco crumbled on top and salsa on the side. Enjoy!
Recipe 2: Salvadorean Chicken in White Wine
This traditional Salvadoran dish is packed with flavor from white wine, tomato, and a mix of spices. The addition of bell peppers and olives make this dish perfect for a crowd. Here’s how to make it:
Ingredients:
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 1/2 teaspoon ground cumin
– 1/2 teaspoon oregano
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1 can of diced tomatoes
– 1/2 cup white wine
– 2 pounds chicken pieces (thighs or breasts)
– 1 green bell pepper, diced
– 1/4 cup green olives, sliced
Instructions:
1. Heat the oil in a large skillet over medium-high heat. Add the onion and garlic, and cook for a few minutes until the onion is softened.

4. Add the chicken pieces and reduce the heat to low. Simmer for 15 minutes, until the chicken is cooked through.
5. Add the bell pepper and olives, and cook for a few minutes more until the vegetables are tender.
